Back through the 80's it seemed like it was much more common to have troublesome heads of state/governments just overthrown without starting a whole war about it, but this hasn't really been happening much lately, has it? What happened?

The nations that were prone to do it, already did it?  Maybe.  The places left that need to hit the reset button are held on to a little tighter by the current powers.  You're not a going to get a "Color" Revolution in N.Korea or Iran.
